Phthalates are used as plasticizers for plastic materials. Bearing in mind that phthalates easily migrate to the environment and represent environmentaly risk substances, it is important to know their concentration in plastic material and food, as well as the conditions under which phthalates migrate from plastic articles. The following phthalates were tested: dimethyl phthalate, di-n-butyl phthalate, benzylbutyl phthalate, di(2-ethylhexyl) phthalate and di-n-octyl phthalate. Their migration into milk, dairy products, alcoholic beverages (white brandy and synthetic wine) and artificial saliva from plastic articles made of the following polymers: polyvinyl chloride (PVC), polyethylene terephthalate, high density polyethylene, low density polyethylene, polypropylene, polystyrene and polycarbonate was monitored. A liquid-liquid extraction method was developed for three different types of food matrix: high fat food, low fat food and non-fat food, which was confirmed by quantification of phthalates in food samples using GC-MS technique by developed and optimized method for determining phthalate concentration in food samples of different degree of fat: water, alcoholic beverages, milk. The development and optimization of the method for determining the concentration of phthalates in samples of PVC plastic articles using the GC-MS technique and the development of a new method of quantifiTrellocation of phthalates in PVC plastic articles using the FTIR technique were performed. Finally, the degree of migration of phthalates from plastic materials in contact with food and pharmaceutical products and PVC toys into the recipient model was examined. The analysis of factors influencing the migration of phthalates from plastic articles to the appropriate recipient was performed (recipient model, milk and dairy products, artificial saliva): temperature, ultrasound, fat percentage of milk and dairy products, UV-A, UV-C light.

This dissertation is a part of the research performed within the Grant of the Ministry of Education, Science and Technological Development of the Republic of Serbia TR 31060 “Production of new dietary dairy products for high-risk population based on qualitative and quantitative analysis of health risk markers for milk consumption” and III 41018 „Preventive, therapeutic, and ethical approach to the preclinical and clinical researches of genes and modulators of redox cell signalling in immune, inflammatory and proliferative cell response” and within the research program – Contract No. 451-03-68/2020-14/200124 and Contract No. 451-03-9/2021-14/200124. The experimental part of this thesis was done in the Laboratory for Mass Spectrometry and the Laboratory for Applied and Industrial Chemistry of the Department of Chemistry of the Faculty of Science in Nis, as well as in the Laboratory for Spectroscopy of the Faculty of Technology in Leskovac, University of Nis.
